Beating eggs - I have a new method which I have discovered and am very very pleased with myself!

I obviously don't get out enough...

Break eggs into jar (add whatever you need - milk, essence, herbs, seasoning...) pop on lid and shake like mad. The kids love doing this and they can now 'beat' the eggs (and pour them into the cooking) without making a huge mess (make sure the lid is on tight).

I also find it rather theraputic!

It's a big jar... and I have perfected doing it single-handed (and teaching DS how to do so too).

Isn't it fun. I made an omlette in a jar. DP was not overly-impressed.

I like it. Your DP prob just peeved he didn't come up with it himself.

DS(6) is better at cracking eggs than his cack-handed Mummy.

Omelettes are much lighter and fluffier if you don't beat the eggs at all. Just take an ordinary knife, cut through the yolks and mix very gently. Unlikely but true, honest.

Mine was quite fluffy - but I did half cook it on the hob the pop it under the grill. I love them a bit runny though, with slices of cheese popped in and folded...... I feel lunch coming on................
