Levi Roots pepperpot stew with spillers dumpling - chillies

I made the stew that Levi Roots made on Saturday kitchen and it was gorgeous. However we are not overkeen on really hot food but don't mind a bit of kick.

The recipe says 2-4 scoth bonnet chillies. I used 1 and did not include the seeds and it was still a bit too hot for DH

Would I better off using a different type of chilli or just cutting down to half a chilli

I'd try milder chillis as scotch bonnet ones are some of the hottest you can get

I use his book quite a lot and tend to replace the Scotch bonnets with just regular red chillis - DH likes a Scotch bonnet or two but it's too hot for me and DS1.

The thing I love about his book though is that for every 'take your mouth off' hot dish, there's something else with loads of flavour but no heat, so you can usually find something everyone can eat.
