My usual answer is to open a packet of crisps, now obviously it's not a healthy option and tbh it's not very filling. What would you cook/prepare thats quick, yummy and filling?

Chicken and mushroom risotto.

Anytime DH goes away I give the DD's pasta and then spend a happy half hour in the kitchen making my risotto.

Toasted cheese sandwich or plain pasta with a knobette of butter, spoon of marmite and grated cheese. Delish

When my dh is out I have something eggy. Either fried eggs on a toasted English muffin with mushrooms and HP sauce....or an omelette with cheese/mushroom or cheese/spring onion. Quick and yummy!

Last night DH was stuck at work so I had a slice of ham with fresh cooked spinach, lots of parmesan, two poached eggs and a handful of fried mushrooms layered on top, with lots of black pepper. It was delicious.

Fried egg sandwich for me. Not nearly as sophisticated as the other egg-based options on here but its my comfort food option when I want something quick tasty and filling.

Brie and crackers, avocado, a bowl of warm edamame, white wine. I like fidgety food I can pick at while watching television (which I only ever do when my husband is out) and can last a whole Dr Who episode.
