Easy Vegan recipes please!! I am a confirmed carnivore with 2 vegans coming to dinner tomorrow so need some help.

Dstepson and his girlfriend are coming round for dinner tomorrow. Stepson is a lapsed vegan, but his girlfriend is strictly vegan so I am cooking vegan food for them both.

I was going to do a chickpea and sweet potato curry, as I make the spice paste myself and know there is nothing untoward in it. However, she doesn't like curry. She also doesn't like pasta and is not keen on lentils.

I am at a loss as to what to cook? At this rate they will have a bowl of peas. Has anyone got any quick and easy ideas (I will be cooking after work so it does need to be qucik and easy!!).

mushroom risotto and antipasti - olives, sundried toms, artichokes, roasted peppers?

instead of chickpea and sweet potato curry, do a chickpea and veg moroccan tagine. Look in the recipe section for my moroccan tagine recipe. Serve it with couscous and home made flat bread.

It really is delish.

Am dubious about any vegan who doesn't like curry or pasta though, surely they shouldn't be so bl**dy fussy?

I don't know about the tagine though as when SS told me about her not liking curry I (comewhat exasperatedly) said why why does't she like curry, apparently she doesn't like spicy food.

Actually I think the antipasti might be the way to go. Mind you I know from experience that some breads have milk in, so will have to go to the free from section in the supermarket.

Tis a bloody minefield. I could do a salad but it does seem a bit bleak.

Eh? No need to go to the free from section for bread, just read the ingredient list on the back of normal packaged bread, especially if it's pitta bread or something you'r getting.

I'd recommend vegweb or post punk kitchen for vegan recipes especially cakes or puddings.

Veg stew and dumplings made with lots of root veg and my secret ingredient of a can of coconut milk added to tomatoes and tomato puree. Add some chickpeas too.
The vegetable atora is vegan.

Stir fry, with rice if she doesn't like noodles. Loads of nice veg, with tofu maybe? I just like stir fries with Chinese 5 spice, soy sauce and sesame oil.

not egg noodles obv. tofu is nice if you cut it in quite thickish strips and shallow fry separately for few mins, add when oil hot and add to stir fry at the end. will be nice without tofu too if veg nice.
