does anyone have a nice simple recipe for a sauce to go with egg noodles?

Having salmon tonight and instead of the usual chips or potatoes was thinking of using egg noodles but don't like them on their own. Does anyone have a simple sauce they know that I can create?

I've got a simple one but you may not have lemon grass -

In a little saucepan put soy sauce, water, sugar & lemon grass & simmer for a few mins - hey presto!

Or just boil noodles & stir fry with red peppers or any veg you have in & splash of soy sauce, garlic, honey??

Maybe not simple but fish sauce, lime juice, bit of sugar, garlic, chillies and sesame oil. I usually have this with rice noodles with some prawns and spring onions thrown in.
