Just put together a chicken pie from Sunday's leftover roast chicken. Made white sauce, mixed in veg and the chicken, and left on the side for the sauce to cool down a bit before I put it in the fridge (eating tonight).
Sort of forgot about it - it was on the side for about 45-60 minutes. Is that too long? I rationally think (I think) it's ok but am (seriously) verging on OCD-type tendancies with food preparation and get really anxious about poisoning everyone, so need reassurance.
