I think pork rather than bacon would work better in a tomatoey sauce than in carbonara.
Or sweet&sour (ish) pork:
Fry onion garlic ginger (and pork if not yet cooked), throw in a bit of flour (this will make the sauce thicken) add tinned tomatoes, little bit of orange juice, bit of vinegar, some chilli if you like, some chopped pepper if you like it, cook til the sauce goes thickish. Eat with rice.
