Katsu curry - sugar alternative

I want to make a Katsu curry tonight (like the one you get in Wagamama only with quorn instead of chicken), only it says you need 1/2 tablespoon of sugar and I don't have any.

Should I just leave it out or is there something else I could use instead? I have honey!

Want to start cooking within the hour so any help appreciated.

Honey would be fine, I'm sure. I often substitute honey for sugar when I'm baking or cooking.

Well I used a little honey and some nutmeg in the end.

I can't remember where the recipe is but off the top off my head:

1 inch of ginger (grated or chopped finely)
3 teaspoons of Curry powder
3 cloves of garlic
4 tablespoons of Olive Oil
1/2 teaspoon Sugar
1 teaspoon Paprika
1/2 teaspoonSalt
1/2 teaspoon Chilli
2 tablespoons of Flour
Water

Mix flour with curry powder in a bowl. Pour oil into frying pan. Fry garlic. Add flour and curry powder. Mix until it turns into a dry curry paste.

Add paprika, salt, sugar and chilli and mix further.

Add water gradually (it didn't say how much but I added two glasses in the end - it ended up like a sauce).

That's it! It is so simple. It was the first time I tried it and I really enjoyed it. You can then just pour it over chicken, quorn, pork, e.t.c...

My dds love Katsu. Wj=hat kind of curry powder do you use (I never buy it as I tend to just use a load of spices)?

Hi Janeite, Just checked and the curry powder I have is made by Schwartz and is there medium one. Looking at what's in it, it would be easier enough to do it yourself with spices - it would probably taste even better.

Ingredients are coriander seeds (30%), salt, turmeric, giner (8%), cumin (7%), fenugreek, black pepper, mustard seed, garlic powder, all spice, cayenne pepper.
