any super quick muffin/cake recipe using oil please?

I need to make something for dessert for kids for today.
Don't have much time or energy to make them.

This is the recipe I always use for muffins - guess you could replace the blueberries with something else if you don't have any in?

Blueberry Muffins

2 Eggs
240ml Milk
120ml Vegetable Oil
100g Granulated Sugar
100g Soft Brown Sugar
375g Flour (plain)
4 teaspoons Baking Powder
1 teaspoon Salt
175g Blueberries

Preheat the oven to 200°C (gas mk 6, 400°F). Place the eggs, oil, sugars and milk in a large mixing bowl and quickly beat together.

In another bowl, thoroughly mix the flour, salt and baking powder.
Add the dry ingredient mix to the liquid, and roughly mix it in - it does not have to be absolutely smooth.
Stir in the blueberries.
Fill a muffin tray with paper muffin cases, and then fill each case to near the top with the muffin mixture. Bake the muffins for 25 minutes.

This recipe makes approximately 12 muffins.

BTW you don't need salt in the muffin recipe.

Yes, sorry, I meant to say I'd omit the salt if cooking for kids. I never bother with the two types of sugar either.

I will do that mug cake as it looks sooo easy but I love blueberry muffins and will get some blueberries do a proper batch of them.
