i only have chicken breasts defrosted (its 3pm here)

what can i do with them thats better than chucking them in ready made sauce (which is what i was going to do for us!)

Have you got cream or blue cheese? Some ham or bacon? Slit chicken breasts open, shove in a little cheese, wrap in ham/bacon. Put in a roasting dish, sling in a glass of white wine (the rest is yours ) and cook for 25 minutes.

Alternatively. Make a marinade of a few teaspoons of mustard (preferably the grainy stuff) the same amount more or less of honey, a little soy sauce and lemon. Leave the breasts in there until DH comes home. Leave the marinade on them and cook under the grill. Spoon any left over marinade over the underside when you turn them over. These are actually a bit nicer when slightly singed as the honey caramelises. Serve with a simple salad.
