How to cook pork tenderloin?

I bought a pork tenderloin today,from the reduced section at Sainsburys,for £1.49, and I'm wondering how best to cook it as I've never had this particular cut before.

cut it into medallions it needs v little cooking time
i find a griddle pan useful

I cut into approx 1-2 cm pieces and bash them flatish with a rolling pin and some clingfilm, fry for about 1-2 minutes each side(all they need if they're flattened) and serve with some mini garlic roast potatoes, a creamy tarragon sauce and some green veg.

£1.49 is a bargain, it's nice cut of pork.

Thankyou both. I'll do exactly that,frying them in the griddle pan and serving the medallions with those sides.

Score it, then smother in jerk sauce, pushing the sauce into the scored flesh.

Delicious, jerk pork. Serve with reoast breadfruit.
