Pad Thai recipe

I absolutely love Pad Thai but haven't been able to re-create it at home...until Now! so thought I'd share this great recipe I found on Mydish. Enjoy!

One pack Dry rice noodles
250g Chicken or King prawns
2 Limes
2tsp Soya Sauce
1tsp Fish sauce
1tsp Sugar
2 Spring onions (chopped)
½ a cup Beansprouts
few Chopped peanuts
ripped Coriander

Method

1- Put the dry rice noodles in a large bowl. Pour boiling water over them and leave for them for four minutes, then drain them under cold running water.

2- Squeeze half a lime into a bowl and add the soya sauce, sugar and fish sauce and mix well. Set this aside.

3- Heat 1 tbsp of vegetable oil and fry the prawns or chicken until they?re cooked. Add the spring onions and noodles and toss around. Tip in the lime juice mixture, then stir in the beansprouts, half the peanuts and the coriander. Cook for one minute until everything is heated through.

4- Tip the noodles into a large dish, sprinkle with the rest of the peanuts and coriander, and serve with wedges of the remaining limes.

5- Now enjoy! Best served with spring rolls and sweet chilli sauce for dipping.

GreatOrmondSt sorry it’s taken me over a decade to appreciate this but I am about to make your pad Thai 😃so thank you for the recipe as I was searching for a good one !

Yum. I love Pad Thai. Thank you for the recipe. I always thought you have egg in it- cooked in the pan then scraped and mixed into it?

Funnily enough I did add 2 eggs - I also increased quantities and glad I did as 4 of us demolished it and DC said was best meal in a long time
