BANANA OAT MUFFIN DISASTER.

Never baked before with my 19mo DS so felt right proud of myself this morning scheduling in a time slot to make the banana oat muffin recipe from the breakfast suggestions here on MN. Followed the recipe to the letter but they stuck to the paper cases and were all mushy in the middle. He simply turned his nose up at them but boy, did they smell good! What went wrong? I have a fan assisted oven so do I turn it down a notch so the outsides aren't as brown and the insides cook a bit more? I'm sooo lost, it's been years since I baked anything and my mum is away (she's the expert!) Heeeelp!!!

Yeah, fan ovens mean you turn it down by 10-20C.

Also, personally, I don't judge whether baking is 'done' by the clock, I poke things with toothpicks. When a toothpick comes out clean, the baking is done.
