DD loves custard, rice pudding and anything she can "help" to make. Baked bananas with a couple of melted choc buttons on is a particular favourite.

She also eats a lot of soup with veg in. She loves brocolli and cauliflower cheese and corn on the cobs and likes raw veg (carrot, cucumber, red pepper sticks) with humous or cheese & chive dips

mashed potatoes!!! do them with a bit of low fat cheese and you have amazing cheesy mash, loads of protein and carbs and they do count towards your 5 a day

what about low sugar flapjacks as a pudding? or creamed rice? or tinned fruit sometimes appeals to kids - if you get the kind that is in juice instead or in syrup it's much better. or jelly made with fresh fruit juice in it?

for veg - could you try roasting chunks of sqash, carrot, pepper, and sweet potato? You can keep it in a tub in fridge for eating cold too.
For puds - rice pudding with fruit puree or blueberries in.
Individual fruit crumbles that they help make (same as with mini cheesecakes as on cbeebies). In fact, have you checked out that cooking for kids prg website off cbeebies? That might have some good ideas for both puds and veg hiding.
ALso - you could try growing cherry toms and cucumbers in the garden so they can help and watch them grow etc so then might want to eat more veg and salad.

I never gave dd puddings other than yoghurt/fruit - not worth the effort imo

Rice pudding - especially home made - and you can hid fruit pieces/puree in it.
