Herbs/spices for couscous

I went to York last year and had the most amazing couscous served w/ fish...it was a deep red in colour and had a vaguely moroccan or mediterrenean taste. I make couscous salads fairly often but am desperate for a change - what do people add to theirs, in terms of herbs/spices?

Also, am thinking of trying to make paella. Anyone got a good recipe?

lemon zest, lemon juice, black pepper and fresh coriander.

fresh chilli

mint, parsley, any other leafy green herb I have lying around, black pepper and feta or halloumi.

cumin, coriander (ground), cinnamon, orange zest & juice

a bit of ras-el-hanout in with some stock to cook the couscous.

(not all at once, you understand )

Whereabouts in York did you eat the Holy Grail of couscous?

If you want to cheat..... M&S do pastes in small jars for various meals like tagine, tikka masala etc and they also do one called couscous paste and it is lovely - tried it last week and it definitely gave the couscous a nice kick
