Hello it's not too late to make these!! Here's the recipe I use:

250g self raising flour
125g butter (better than marg )
75g caster sugar plus more for sprinkling
pinch of ground mixed spice/all spice
1 large egg
100g currants/ sultanas

  1. rub flour and butter together

  2. mix in sugar, salt, spice, egg and currants. knead together into a dough and allow to rest for 20mins.

  3. flour board and roll dough out to a thickness of 1/4ins, use a scone cutter and cut into rounds

4)heat griddle pan or heavy- bottomed frying pan and cook over a med. heat. they are best left a little soft in the middle and they will finish themselves off as they cool. You turn them over when the underneath is golden brown.

  1. drop onto a tray liberally dusted with caster sugar and sprinkle more sugar over the top. (allow 5 mins to cool before eating them so that they finish off cooking.)

Have fun hope they taste nice.

I have inherited (via my Aunt because she doesn't cook/bake) my Grandma's bake stone. She used to make the most yummy welsh cakes and I haven't tasted one as good since she died (17 years ago). I have also inherited the secret family recipe but have only tried it out once and the bake stone took a while to get used to so ended up with lots of burnt ones!!

Now you've reminded to me to have another go!!

Do you think you could cheat and use a food processor? I hate rubbing in.

Haven't had a warm homemade one for years.

There's a unit in my local indoor market that makes them on the premises so you buy them straight from the hot-plate!
