Hello it's not too late to make these!! Here's the recipe I use:
250g self raising flour
125g butter (better than marg )
75g caster sugar plus more for sprinkling
pinch of ground mixed spice/all spice
1 large egg
100g currants/ sultanas

rub flour and butter together

mix in sugar, salt, spice, egg and currants. knead together into a dough and allow to rest for 20mins.

flour board and roll dough out to a thickness of 1/4ins, use a scone cutter and cut into rounds
4)heat griddle pan or heavy- bottomed frying pan and cook over a med. heat. they are best left a little soft in the middle and they will finish themselves off as they cool. You turn them over when the underneath is golden brown.
- drop onto a tray liberally dusted with caster sugar and sprinkle more sugar over the top. (allow 5 mins to cool before eating them so that they finish off cooking.)
