I made this hummous recipe at the weekend for a kind of shared lunch thing. It was really nice and highly praised [boasts] the roasted peppers helped avoid the grey sludginess problem.

Ice cubes? really?

Never heard of that one!

I use tahini in falafel to help bind them

I was taught to make hummus by a gorgeous man of Syrian origin . The icecubes stuck in my memory...

I saw a houmous recipe online recently where instead of tahini they just used sesame seeds. Planning on trying it as I had the same problem with tahini (not using it up). Of course I didn't MN then and was without all this advice!

Ice cubes? Really?

  1. Tahini keeps for ages in the fridge and if you make hommous or whatever regularly you'll use it up!
  2. Don't ever attempt to add the tahini to the rest of the hommous ingredients - it will solidify! Combine all the other ingredients in a blender then tip out into a bowl and stir the tahini through with a fork.

I tip it all into the blender together, seems to work ok here - but then, I don't add much tahini as I find it too bitter for my taste.
