egg-free crepes - help!

Hi,

My DD is egg-allergic and we've had reasonable success with EnerG egg replacer for most things. We tried crepes tonight with my husband's usual recipe with the egg replacer just substituted in, but it was a disaster! Does anyone have a mix that works?

This recipe is for Vegan (egg & dairy free) pancakes although, if you can use ordinary milk, then go ahead. They are sweet though and I only usually make small ones but you could experiment with the ingredients to make them savoury.

150g plain flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon (optional)
2 tbsp mild tasting oil
5 tbsp water
300ml soya or rice milk
1 tsp vanilla extract
2 tbsp maple syrup

mix the wet stuff, then add to the dry stuff - dont overmix.

Heat a tiny bit of oil in a pan
add a thin layer of batter and turn when bubbles cover surface.

Don't know about crepes, but we just leave the egg out and add a bit of oil to the basic flour/milk mixture and fry like normal pancakes. works fine for pancakes, haven't sussed egg free yorkshire puddings yet though.
