Jerusalem artichokes

Hi,

does anybody know if you can do a potato bake type thing but use jerusalem artichokes instead of potatoes? So the other ingredients would be milk, cream, garlic, bay, thyme. And would this go with rack of lamb? I've only ever had JA in soup.

yes indeed you can, there is a jamie oliver receipe for it which I've cooked and it's really nice! Can't find it online but if you cook it as you do for potatoes it should work fine

Can't stand lamb so can't comment! I find that the artichokes come out slightly sweeter than potatoes so probably depends what sauce you're doing with the lamb.

yes and you could also do one withoutr the cream but with herbs and chicken stock. this may make it less sweet.

maybe you could go for a lamb hotpot type thing?

thanks, will look for the jamie oliver recipe. Haven't thought of a sauce with the lamb...probably something minty from a jar!

I have made a gratin dish with ja's before, it had cream and lemon and thyme and was very nice, with parmesan and breadcrumbs on the top. Can't remember if I par-boiled the artichokes first.

The jerusalem artichokes are also very good if peeled, boiled, sliced into chunks and served with vinaigrette. Warm or cold.

Jerusalem artichokes (called sunchokes here) are very good peeled and grated into a lettuce salad. Also yummy grated and added to sandwiches. Or...grated or diced finely, mixed with shredded cabbage, grated carrot, sunflower seeds and vinagrette. Yum!

I rarely cook vegetables, I just don't like them cooked very much. And I have this idea in my head that the more raw food I eat the better. Don't know why, really. DD is the same, she even likes her sprouts raw!
