Roast Chicken Risotto?

Hi. I'm desperately trying to cut down our food bill, so this week I'm buying a chicken and trying to make it last for more than 1 meal! I thought a risotto would be nice, I've never cooked it before so it'll be a pleasant change. Only problem is that I can't find a recipe that appeals to me. The only one I've found that sounds like we'd enjoy it was this one - www.bbcgoodfood.com/recipes/3522/roast-chicken-risotto but that has a glass of white wine in it, which we can't really afford at the moment . So, does anybody know what I could substitute the wine for, if anything, or does anbody have a tried & tested delicious, wine free recipe? TIA.

You don't need the wine - I very rarely use wine in risotto as I don't drink and DH tends to drink red, so it would be a waste to open a bottle just for one meal. Just skip that bit - and start adding the stock - you just might need an extra wine glass-full of stock that's all.

Roast chicken risotto is yum.

Or how about fried rice, with the leftover chicken and veg - just add some chinese five spice, dried chilli (if you want to) and soy sauce to cooked rice stir fried with the chicken and veg to heat it up.

And then make chicken soup by boiling up the carcass after you've got all the meat off.

With a chicken I roast it and have it with all the trimmings.

Take off all the meat and then pad it out with extra veggies and you need very little meat really.

I do a chicken curry and a madeup recipe called Red Rice which is

fried onions and garlic and mushrooms and peppers. Stir in chicken and a tin of chopped tomatoes. Bit of veg stock and then some frozen peas and uncooked rice. Simmer til rice is cooked. top with cheese and serve.

Easy peesy.

Ooh great thanks, wasn't expecting replies so quickly! Thankyou both, MustyOdour, I never thought of that! Good idea.
tkband3, I did think I could probably just use extra stock, but I've only started cooking 'properly' in the past year, so I'm still completely clueless a bit of a beginner. The rice sounds good too, I'm hopefully going to try & get 3 meals from our chicken, so that may well be the third. Ds is very picky at the moment, but will eat rice so another rice recipe is always handy.
