I have some raspberries which need using- can I puree them and add them to my usual cupcake mixture?

Or does anyone have a good recipe?

Thanks CMOT- I have a vision of iced raspberry cupcakes though... don't think the chocolate would work. Besides, I'd have to go to the shop and get some and I'm just too lazy

I recently made a Madeira cake with raspberries and almonds. Served it to MIL and FIL who like cake and MIL a good baker. They said it was my best ever.

Or if you are really set on cupcakes, I would keep the mix plain and add pureed rasps to the icing.

Raspberry and Almond Madeira Cake

175g softened butter
175g caster sugar
1 tsp vanilla extract
3 eggs lightly beaten
50g flaked almonds
grated zest of 1 orange
100g plain flour
100g self raising flour
2 tbspn milk
200g raspberries
icing sugar for dusting

Oven Gas 3/160 C. Line and grease 20cm cake tin. Cream butter and sugar, beat in vanilla then add eggs gradually. Set aside a few almonds. Crumble the rest and stir in with orange zest into mix. Fold in sifted flours and milk and then all but about 8 raspberries. Put in tin and level, arrange remaining raspberries on top. Sprinkle on remaining almonds and bake for 1 hour 15 mins.**

Cool in tin for 10 mins then turn out on wire rack. Dust with icing sugar to serve.

** It actually took 1 hour 45 mins in my oven.
