yes, but if it has lots of garlic in may taste a little bitter when defrosted

no not too much garlic.

Just worried the vegetables would sort of disintegrate completely or something.

well obv when you defrost you'll need to reheat so I guess do it slowly to prevent overcooking.....

I haven't frozen it for ages, my only memory of doing so was that when I defrosted it it was a bit watery. But that could have been my cooking. I am better at it now.

Personally, I wouldn't, if you have used courgette or aubergine, as both become very watery and sort of 'broken down' upon defrosting.
