Gingerbread men, can anyone make soft ones?

The kids and I really enjoy making gingerbread men, but they do end up a little hard once they have cooled.

How should I tweak the recipe to make the softer less brittle ones?

cook for less time

This recipe makes soft ones as long as you don't roll it out too thin or or cook it too long

I do have a (yummy) recipe for soft gingerbread, in one of DD's recipe books...but it's at the bottom of her (messy) cupboard (think open door and get buried messy) that I'm due to clean out on Monday. Will find and come back then! It doesn't seem to matter how thin you roll it either.

Roll thickly and cook for a shorter time should do it.
My ds loves making them.
