I wondered if anyone has recipes for cakes/biscuits. DC3 has milk intolerance and has to be dairy free for a while till he grows out of it...

I think he is allowed eggs - yet to see dietition..

Dear cece. That's easy both dh and i don't have dairy I make cakes and biscs. with olive oil I also use it and avoe oil on toast.

You can use normal recipes for things like gingerbread and flapjacks easy "on the stove' type and add the oil of yr. choice. I also do the same with pastry which works ok but you have to push it into the tin rather than roll it out! It tastes good even my grown up do's like it.

this is fabulous. Obviously the icing has dairy in it, but the cake is fine without - I never bother with it and we're all dairy eaters.

Oh thanks, yum they look good. Will try a few over half term and the forthcoming weeks. The carrot cake lloks good.

I have never thought of using olive oil. What measurements to use? Is it like for like weight wise?

Just use any normal recipe and substitute PURE spread instead of butter - that is what I do. It is alot more difficult to bake without eggs but it is possible.

Soya PURE spread HERE - but must admit I buy the sunflower version but cant find it on Tesco site.

stirling, I discoverd Pure margarine the other day. Thanks, wasn't sure if it was suitable for cooking with.
