How do you cook Fillet steak?

Got dh and I a lovely piece for tonights tea.

Normally season, put a little oil on the steak and then fry in a hot pan for a couple of mins either side.

Anything I'm missing?

oh there was a heated debate on this at some stage (on here, gawd knows when)

I grill them - only because dh likes his blue/rare and I like mine well done and if I have to put them in the pan, his blood taints my nicely done steak

fillet needs to be cooked as you said, a few minutes only. If you want well done steak get another cut

Everything you have said but make sure the pan is smoking hot, I have an iron pan which I heat for ages first.

Oil the meat, not the pan.

Season, then after cooking rest the meat for at least 10 minutes, wrapped in foil it will retain its heat.

Rub salt into the meat

Leave to get to room temperature

Heat butter and oil in a pan until HOT

Fry on both sides for max 3 mins each side.

stick it on a plate and walk it through a warm kitchen.

or for the wusses
heat a little olive oil in a pan, season the steak with salt and pepper

3 mins either side.

Nice thick piece?

Baste in frying pan in hot butter & oil (over gentle-ish heat) until browned all over and then transfer to hot oven for 5-10mins.

Yum.
