Sloe gin, and similar drinks

I've got a bottle of Sloe Gin, and another of Elderberry Gin, that have been macerating since September or October. If I open them and decant some of the gin, can I top it up with fresh gin? Will they continue macerating and improving?

Well, you can do that, but the flavour in the rest of the bottle will suffer. The flavour of the sloes and elderberries has already been extracted from the fruit by the gin. If you add more gin, it will dilute the flavour of the fruit. Of course, if you find the sloe/elderberry flavour a bit strong, then this may be ideal. However, if you add more gin, you also need to add more sugar - ratio is 1 bottle gin to 1kg sugar, adjust as required.

Have you removed the fruit now?

Apparently you should sieve out the fruit after 3 months and just put the fruit gin or vodka in a bottle. It should keep like that for a long time.

Mmmmmm, niiiiiice website.

Sounds like it's best not to add more gin - unless you like the flavcour of gin, which I don't.
