Salsify- how do you cook it?

Hi - I have some and I have blanched it and plan to roast it this evening, so I've basically treated it like a potato. Does anyone do anything different with it/have a better idea?

Once blanched, melt butter and olive oil in pan and fry with crushed garlic for a few mins. Toss salsify with garlic butter mix and sprinkle w parsley.

Or dip blanched roots in seasoned flour then beaten egg then breadcrumbs. Heat oil in pan and shallow fry until golden or roast in a tin in oven.
