Just interested. What is spelt flour like. I have been making bread by hand (very quick) but really should be doing wholemeal but is spelt like a wholemeal and what is the texture like? Worth it?

We bought spelt bread from the local market a few times. It was lovely and very tasty, it was a bloomer shape.

We were told it was gluten free, which isn't strictly true and it disagreed with my GI son, so be aware of that.

I make flatbread using spelt flour. Basically they are just flour, a bit of oil and water. Knead it a bit, let it rest for 30 minutes then roll small balls into round and cook both sides in an unoiled pan over a reasonably high heat. I use them to make wraps for lunches. In fact, I've just finished my lunch which was tomato, red pepper, olives and spinach in a spelt flour wrap with cumin seeds and cayene added into the mix.
