help needed for scrummy choccy birthday cake!

Have trawled the archives but not found what I'm looking for (almost but not quite!)

I have been asked to make both my gran and great aunt's birthday cake(s) for this saturday. I'm looking to do a moist choccy cake double tiered thingy covered in chocolate icing, with fat white chocolate icing border, with writing in white chocolate in the middle (if that makes sense).

I have a few questions - does anyone have a recipe for realy moist choccy cake, What can I sandwich it together with and how/what can I use to ice the cake and write the messages?

Difficulty isn't a problem as a)I'm not too bad at baking and b)I have all week to practise!!

Is it worth doing two seperate cakes or one to share?

this is lovley and moist
250g( 90z) self-raising flour
6tsdelspoons of coco powder
2 teasp of backing powder
300g (10z) sunflour marg
300g (10z)soft brown sugar
2teasp vanilla essence
6 large eggs
150g(dark choc
two 20cm (8in) round cake tins.
150ml double cream

puy some greace proof papar in tins

sift flour coco and backing powder
get an other bowl put marg and sugar and beat until creamy add vinila beat again
crack a egg add it to bowl with 1 tadsp bear well and repat with each egg then gently srir in rest of flour put in tins and oven 170c 325f gas
mark 3 cook for 40 to 45 mins for the icingbreak choc into heat proof bowl add cream heat 5cm (2ins)of water in a pan until bubbleing when cooled stri icing .spead jam on one cake and put a third on other cake then the rest on top and sides hope this helps

also write message in white icing can buy a icing pen

What do you recommend to sandwich it together and ice giraffeski? I will be making both these cakes

Also. Sorry to be stupid but what is gananche (sp)?? and how is it used?
