Sweet potato recipes, please!

Any ideas for sweet potatoes, please, as I have a load in the fridge and need inspiration? We are vegetarian, and it needs to be suitable for freezing, as well. I normally do a sort of sweet potato + red lentil sauce which goes well with rice etc., but would like something different for a change.

Sweet potatoe pie - mashed SP with cheese & fried onion

My DH does a sweet potatoe pudding (dessert) but the ingredient change everytime he does it - so I can't tell you how

Mindees have it at least once a fortnight usually with beans, DH has is as his "potatoes" with any sort of meat.

That sounds gorgeous Katy, just wondering if I could freeze it, probably not I guess. I like to cook in bulk at the weekend and then reheat things in the week, also they need cooking NOW (well, this weekend) and there are a lot of them.

I guess dauphinoise would not freeze either? It has cream in, right?

Yes I make 2 or 3 at a time and freeze what's left - either whole dishes or individual spoon foods (for when I have an unexpected baby and need easily mashable food or for a treat for DD to have with her tea)

But if my helper KJ is around I rarely have any left between her & DH we have arguments about how they each deserve the larger portion of what's left

I would say cooked dauphinesse (sp) would freeze fine - but I freeze most things and learn by my mistakes

Can't you just parboil and freeze anyway - then you could get them out as you need (like for chips)

So the pie is just cooked sweet potato, mashed with grated cheese and fried onions, browned under the grill, and it freezes ok? Fab. Sounds easy and I fancy some right now!

Not sure about parboiling and freezing, I would worry they would come out mushy (but am a bit lairy of freezing things generally).

The more onions the tastier (IMO) and if you have to ask if you have added enough cheese then you haven't

How do you make sweet potato chips, I've tried and only got soggy things that are black round the edges. I boiled them for 3 minutes then fried in very shallow oil.

Well i slice them rather than chip them (iysim)
Then I par boil for about 10 mins
The into hot fat until golden brown

Made the sweet potato, cheese and onion bake thing - my son loved it and have stuck some in the freezer for later, so thanks for that. Any other ideas still useful though.

sweet potato salad with mayo, spring onion, dash of lemon juice and wholgrain mustard. oh, and fresh parsley is good in it too...delicious!
