Lunch ideas for night worker DH

DH is soo fed up of sandwiches. He works nights so has to take something every day, no nipping to cafe or something. He's a vegetarian. There is a microwave, but it's old and slow.

Any ideas, please?

stew, lasagne, cold pizza and salad - all veggie obviously! Re-heated stir-fry!

I get sick of sandwiches as well so always cook extra on an evening and then take left overs into work the next day.

Do you want me to send you some recipes?

Spicy veggie couscous - yummy with roasted peppers, courgettes, tofu, cashew nuts too if he likes them.

Having worked nights, you really need something substantial, and you crash around 3:00 am, or at least I did.

rice and dhal
veg with black bean sauce
butternut squash risotto
baked potato (and zip lock bag of cheese)
eggplant parmaesan
penne aribiatta
stir fry with egg noodles

I made DH a pasta salad (thanks coldtits) and he absolutely loved it! Will try some of the other suggestions. He says he will make wraps tonight.

pitta breads?, beans on toast? tinned rice pudding for afters?

could he buy a really cheap toaster and some of those toaster bags and take in a sarnie to toast..cheese and onion/ cheese and pickle?

also, hot chocolate or coffee made with all milk and heated in the micro is warma nd a bit filling....

if it were me, i'd skip all of the above and go for a family size bar of dairy milk!!!

They do have a toaster, so the toasted sarnies would work.

Problem is that for ages he hasn't been taking ANY lunch and then buying chocolate bars at work from the machine. Very expensive and not a good lunch.

Invest in a wide mouth flask. Then cook a bit extra of whatever you are having for dinner that night and put his portion in. Today I am eating reheated chicken stirfried with chickpeas, spinach and lemon (yum, DH is a good cook). Any variety of chilli orcurry seems to improve with an overnight stay in the fridge and, at a pinch, I make Miso soup (a spoon of miso paste in boiling water) and add any limp looking vegetables or pulses that are hanging around in the fridge.

Last night he had wraps with lettuce, red kidney beans, humous and cheese. He said they were lovely and really filling.

It's the weekend now for him so will try some more of your suggestions next week.
