Does this sound like it would work? Casserole type thing.

I have got a chicken carcass with some leftover thigh meat on. Was going to strip the meat, boil the carcass up for an hour or so, then put the stock I get from this in a casserole dish with the chicken meat, some potatoes and carrots and onions and put it in the oven for another half hour.

  1. Do you think this sounds OK?
  2. What temperature should I put it in the oven at? (Gas)
  3. Would mushrooms go well in it?
  4. Should I add anything to the sauce e.g. white wine, tinned tomatoes, honey, mustard etc?
  5. Would the sauce/gravy need thickening?
  6. What would be best to serve it with? I am thinking rice or crusty bread.

Sorry so many questions! Have only numbered them to help me keep track of the answers easier.

you could fry up the veg and add some flour before adding stock. white wine would be good and maybe a splash of lemon juice and cayenne pepper

What if you boil the carcass with the leftover meat on and only realise you've got quite a bit of meat left at the end? Can you stlil use the meat if it's been boiled up with the carcass for a couple of hours when the stock was being made?
