When doing something like chicken nuggets or fish fingers from scratch, do you freeze before or after cooking?

You can freeze the fish fingers raw and cook them from frozen (obviously made from fish that hasn't already been frozen)

I'm not sure re chicken and wouldn't like to advise sorry

Thanks, I've done chicken but have refrozen it. Not sure if I can cook them again now, oops [blush

With chicken - make the nuggets from the raw chicken (doesn't matter if it's fresh or defrosted). Cook in the oven, cool on the side and chuck in the freezer.

15 mins at about 180C in the oven should warm them up (once theyve defrosted, obv)

If you cooked the chicken nuggets before re-freezing them they'll be fine to then cook up later.

tillyfernackerpants · 03/02/2010 20:01

ah bugger, I've refrozen them without cooking them first. Guess they'll have to be thrown now

was the chicken frozen in the first place or was it raw? If it was raw then making the nuggets up and freezing them is fine. If the chicken was frozen, defrosted, made into nuggets and then refrozen uncooked then no I wouldnt keep them.

PureAsTheColdDrivenSnow · 03/02/2010 20:14

yeah, sorry - you can't freeze or heat meat more than once in either it's raw or cooked state.

GreatOrmondSt · 04/02/2010 12:01

tillyfernackerpants - do you have any recipes for home made fish fingers and chicken nuggets or kievs?

There must be so much rubbish in shop bought ones, I'd love to have a go at making my own....obviously taking into consideration all the great freezing tips above

Thanks Amy x

Greatormandst, I do have some recipes, they are much nicer imo . I'm happy to pass them on but the ones I have are from one of the Annabel Karmel books and also a Tana Ramsay cook book.

Will have to remember to ditch the last batch though

Ah ok...that would be great - You could always upload them onto www.mydish.co.uk and don't forget to join the GreatOrmond Street group on there!

Thanks TillyFernackerpants - Have a great weekend x
