help with homemade chicken nuggets please!

My dh made some chicken escalopes for our tea last night and at the same time made some smaller ones for the kids to eat today. He cooked them last night and put them in the fridge but when he heated them up today they'd gone a bit too chewy and weren't as nice as ours last night.

Just wondered if it would be better to make them and then freeze them or just make them on the day?

I either make them on the day that I need them or, if I need them the next day, I would just put them, uncooked, in the fridge. If they weren't needed for a few days I would freeze them

thanks for that, dh wasn't sure if we could put breadcrumbs on and then cook the next day as he thought the breadcrumbs would go soggy. Will give it a go next time. Thanks again.

once cooked i find the breadcrumbs go stale. if small bits you may as well freeze when make and cook from frozen, will not add much time.
