I have 6 of them - any ideas what I can do with them.

Im not that keen on making soup.

Fish pie, (cooked leeks, cooked salmon, sliced mushrooms - raw with sweet potatoe & cheese mash on top)
Chicken, leek, red pepper & mushroom stirfry
Lamb & leek stir fry (with ginger
Leek & potatoe bake (layers of leeks & potato with cream & cheese baked in the oven - or with veg stock cube if on a diet)
Leeks cooked whole wrapped in ham covered in a cheese sauce

leek and bacon pasta (chop and fry bacon, slice and fry leeks, tip carbonara sauce over and add to cooked pasta).

it's amazing.

When I have a surplus of leeks, I chop them up finely and put them in those resealable bags and freeze them. Then, when I am making soup or a casserole that needs leeks, I throw in a couple of handfuls.

If you want to use them now, Jamie's Chicken and Leek pie is nice

This is delicious pancetta and leek risotto

Thanks ladies

I have made Jamies chicken and leek pie, and yes it is amazing.

Will try some of the other recipes, and if I still have some left over I will freeze them. Thanks, I didn't even think of doing that.
