Chicken goujons...urgent!

I have 3 skinless/boneless chicken breasts for our dinner tonight, OH and I are having it stuffed with cheese & wrapped in parma ham, but my DS is quite picky and wont eat it so I wanted to turn his chicken breast into goujons, but don't have a recipe and I'm not even sure how to make breadcrumbs/if they need to be made from stale bread. Oh, and I don't have a blender to help make the breadcrumbs. Can anyone help?

Do you have any plain crackers or even ritz type biscuits. Crushed they are a perfect substitute for crumbs. Otherwise you could dry out bread in a low oven to make it easier to crumble.

Cut chicken into goujons dip in flour, then beaten egg then crumbs and shallow fry.

Eiter use cornflakes and crush them with a rolling pin or try grating crusts with a cheese grater.

Agree, dry bread in oven and them bash with rolling pin.

Have you any parmesan? I add grated parmesan to the breadcrumbs when making chicken nuggets and it tastes lovely. Shallow fry in olive oil with a little butter.

or if you have a hand held blitzer that works for breadcrumbs too....

I do mine from an Annabel Karmel recipe - cut into finger sized strips, mix one egg and a tablespoon of milk in a bowl, and pulverise a bowl of cornflakes. Dip the chicken strips in the egg mixture, then the cornflake crumbs.
Put goujons on a baking tray. Preheat oven to 180 degrees C
Melt some butter (say 30g) in a microwave and pour over the chicken strips, and then cook in the oven for 20 mins, turning half way through.

Sounds like a faff, but it's delicious, and if you've got the oven on anyway it's pretty easy and cornflakes crumbs are easier than breadcrumbs
