Tricky eater recepie needed

Hello,

My neighbour has just had a baby, she had an emergency c-section, and there were some complications but all is well now. As you can imagine she is knackered and has a 3 y.o. too. I want to drop them round some food, but the mum does not eat red meat or chicken, and the dad and toddler do not eat dairy.
I was going to make a lasagne, or a chicken pie, but thats scuppered now. What can I make them that will freeze OK and they can all enjoy?

TBH - unless you know what food they like - it maybe better to ask what help you can give? Or get a recipe fromthem that they do like, it would be a shame to go to all that effort and it went in the bin if they didn't like it...

I agree with Ivykaty44, as you wouldn't want such good food to go to waste. I also suggest you ask her or her husband what their favourite foods are, then go from there.

There should be more generous and selfless neighbours like you around.
