i am half way through delia's chunky marmalade recipe. i can't work out what she means and am worrying will totally mess the marmalade up if i get it wrong. anyone used this recipe? if so, does she want you to use all the poaching liquid in the second stage of the recipe or just the 1 litre that was boiled up with the pips etc?

I've just read the recipe on her website and I think she means that you use the poaching liquid. It's not very clear but I was working on the details of her specifying preserving pan rather than the saucepan that is used for boiling up the pips.

I haven't made the recipe so am just going on what the instructions say. Hope this helps a bit.

thank you thank you squashed frogs. very useful to have another opinion on it (apart from dh's. will crack on now with my first ever batch of marmalade. if it doesn't work i'll just have to have another go at it.

bit more of an art form than i appreciated. have ended up with marmalade toffee by boiling for too long. quite tasty in small quantity but can't see it going on toast

lol oh that's a shame, would it be good as a sauce for ice cream or something?

princessllama · 24/01/2010 21:13
