Oatmeal biscuits/cookies recipe please?

Until i buy the clearly recommended Mary Berry cookbook, can i have a nice simple biscuit recipe please?

THIS is my recipe for oaty cookies - not oatmeal though. My dd loves these and they are healthy-ish

Do you have to use dairy free spread or can you use butter? I don't have any dairy free spread but I have butter, if so I can make them tonight

I would hope with both too as i don't have dairy free either and DH already gone to shops. Did not even notice that

I have made these before with butter and oil, and both worked out well. They are fantastically easy to make, and VERY moreish!

I just made the biscuits with butter.

Om nom nom nom nom

DH and the DDs were lined up awaiting their oaty, spicy goodness.

Oh and the uncooked mixture is rather nice too

Sorry - I wandered off to make a Beef Rogan Josh for visiting family on Friday night. The house smells gorgeous now.

If I had come back I would have said butter is great - I use dairy free spread because my dd is allergic to dairy and egg.

I agree, the uncooked mixture is yummy - I have to stop dd eating it before it goes in the oven

I have not made them yet! But i will be trying both recipes first thing in the morning! I have all the ingredients to make both types so will try them both, figured you can't have too many biscuits with a breastfeeding woman in the house! My boy was demanding last night and DD wanted to make lemon drizzle cake today .

Here's my recipe - it's quick and easy.
4oz self-raising flour
4oz oats
4oz butter
3oz sugar
1 tablespoon golden syrup.

  • Mix and melt the butter sugar and golden syrup together in a pan. Turn off the heat.
  • Add the oats and flour, mix in well.
Leave to cool for a couple of minutes unless you have asbestos fingers.
  • Roll the mix into little balls, squash down onto a greased baking tray (so they make squidgy cookies), then bake for 15 minutes at 170 C.

Leave to cool for a few minutes to let them crunch up a bit. These are delicious, you can add dried fruit, nuts, seeds, chocolate, ginger - one of my favourite combos is date and walnut. Or you can use about 5oz of muesli instead of the oats.
