Marzipan, How to use it up?

I have somehow managed to buy 6 packs of marzipan over christmas and only needed one for the christmas cake.

I love marzipan but I am in danger of eating it all in big chunks like cheese.

So have you got any recipe ideas for family meals, cakes, biscuits?

You could keep some and make a Simnel cake for Easter. But I can't imagine that'll deal with more than 2 packs.

When I did our Christmas cake I dipped the leftovers in melted chocolate and DH and I ate it as sweets.

Don't recommend you do that with all of it, though!

I don't think this make much of a dent in your remaining 5 packs, but I came across a lovely recipe for Plum Tarte Tatin.

Arrange the plum halves, rounded side down, on the butter/sugar mix and then put a knob of marzipan in the hole where the stone was. When the butter/sugar mix is caramelized, pop on your pastry and put in the oven. The marzipan will melt and give a lovely almond flavour to the plums.

My new years resolution is to start making a shopping list then I wouldn't wander round the supermarket picking things up that I already have.

Love the idea of a tart tatin, I have pears in the fruit bowl, so will try it tonight.

Any other ideas out there?

I've just made stollen. Used up less than a block and made two enormous loaves. So, pretty useless for getting rid of marzipan but very nice anyway.

I made a victoria sandwich recipe, added sultanas soaked in madeira and marzipan chopped into chunks and a grated apple and some lemon zest, baked in a square tin and cut into squares.

It has all gone.

My friend is a mad marzipan lover and she was also in this predicament as she had bought too many packets of marzipan and was looking for other foods she could make with it. She then went online and came across a recipe online for Chocolate Marzipan cookies and I was her guinea pig taster, they tasted amazing.
