cold rice salad recipes?

does anyone have any nice recipes for rice salads that i can make for dh's pack up?

Cold rice is one of the biggest causes of food poisoning.

My mother nearly died after eating cold rice salad that was at room temperature.

Use cous cous instead would be my suggestion. Or pasta.

as long as you cool the rice immediately after cooking it and keep it cook, you won't get poisoned.

My mum used to make a really simply one with jsut salted peanuts, finely diced green peppers and sultanas. Very tasty though.

orzo pasta is a good alternative, it is rice shaped! I mix that with roasted red peppers, chopped chives, and a tarragon salad dressing.

There was a brown rice and bean salad recipe in that lunch menu suggestion thread last week. I remember thinking, would any child actually eat it?!

I'd add vinaigrette and chopped/diced peppers/toms/cuc/sweetcorn. Then some nuts/pine nuts for protein.

My favourite is Mexican rice salad.

Cook rice and at the end add either mixed frozen veg, or frozen peas until all cooked.

Drain and run under cold water immediately to cool.

Dressing: 2tbsp greek yoghurt, 1 tbsp ketchup, pinch salt, 1/2 tsp cumin, dash chilli.

Mix it all together and either serve immediately or refridgerate.

For some reason, very good with Chicken pie!
