What can I serve with a souffle for dinner?

I've never had one before but am inspired by Hugh Fearnley's recipe in the Guardian/ Observer/ whatever it was this week.

Would it go well with baked potatoes and salad? - this is for a normal family dinner, not a special occasion.

Garlic potatoes and peas?

I make cheese souffle quite often, when we have a surplus of eggs. It is very easy - just make sure you DO NOT open the oven before time. And get everyone around the table before you take it out of the oven - they sink very quickly.

I serve it with spuds and veg.

Enjoy - it really is very easy.

I would do roast pots and asparagus and green beans

Crusty bread + salad

I absolutely wouldn't serve it with potatoes but I can't work out why...
