Use by date says yesterday...

...on the mince beef I got out of the fridge today. I haven't used it yet but am thinking of cooking it tonight, making up a cottage pie to put in the fridge overnight and cooking the whole thing in the oven for dinner tomorrow. Or is that too risky as the meat will be two days past the use by date by then...?

I would still use it.
But then I scrape the mould off Philadelphia cheese and use mouldy bread for toast so maybe my opinion isn't very useful!

If it smells and looks OK, I would use it; it shouldn't really smell much at all. I would also cook it fully tonight so it only needs reheating tomorrow.
