Vegetarians - what do you eat

Im not veggie - I like meat but really keen to cut the meat down.

Just interested really in what you have for main meals in the evening.

Tonight we had cheese and potato pie.
Yesterday we had puy lentil lasagne.
On Weds we had wedges, omelettes and salad.
On Tuesday we had - vegetable curry and rice.
On Monday we had barley and vegetable soup.

We also like things like:
lentil soup;
lentil chilli;
baked potatoes, veggie sausages and cauliflower cheese;
qaesadillas and salsa;
Thai vege curry with tofu or cashews;
veggie sausage casserole;
baked sweet potatoes with a chick pea or vege casserole;
leek and pea risotto;
pasta and homemade pesto.

Other stuff but my mind has gone blank.

Tonight we had spicy parsnip soup with crusty bread, dead easy, dead cheap - bloody lovely!

sweet potato and chick pea curry (yum yum)

Veggie lasagne

ShepperdESS pie - just chuck in mushrooms, celery, carrots, any veg really, tin of beans or two different types, some garlic, mixed herbs, tom puree tin of toms. Mash potato.

Pasta stuff

last night had jacket potatos with stuffed portabello mushrooms.

loads of things, it does stretch your imagination though - we have been veggie for six months now.

i don't do quorn because im allergic and dont fee the need to "replace" meat.

Some lovely veggie recipes on here, also go to the vegetarian society website they have some good ones there.

Oh, veggie moussakka (a giant faff but worth it)

tonight we had veggie chilli (with red lentils & beans) with enchiladas.

others -

roast veg lasagne
leek & puy lentil lasagne
spinach & ricotta canneloni
veg curry, daal
pasta & tom sauce
aubergine parmegianno
pasta bake
veggie shepherd's pie (use Puy lentils)
stir fry & noodles
pizza
lots of diff homemade soups (usually add a handful of red lentils)
veggie hot pot
leek & mushroom pie

erm....

thanks everyone - thats quite a good few ideas i will give some a try - dh is very much a meat, veg and pots man

We are not veggie but we only have chicken once a week and eat meat once a week (to save money and for health reasons).
My meal plan for winter looks something like this:
Day 1- baked potatoes with tuna/cheese/beans/ratatoe and salad
Day 2-soup and pizza/garlic bread
Day 3-chicken dish
Day 4- pasta with home made tomato sauce/cheese sauce/roast veg
Day 5-meat dish
Day 6- tuna cutlets and baked sweet potatoes and green beans/veggie sausages with rice and ratatoe
Day 7- veggie stew with chickpeas with couscous or veggie curry with rice

None of it is very imaginative, but it's all prety healthy and either takes 15minutes to make or I make it in batches of 4/5 portions and freeze.
