Chicken stew?

I bought ingredients to make a beef stew but seem
to have forgotten the beef . I have 4 skin on chicken breasts in the fridge, a stew vegetable
pack, potatoes, stock. Any Suggestions?

just use the chicken instead of beef surely? you could add wine and some herbs and maybe clove of garlic to give it some oomph. towards end maybe some flour or cornflour to thicken? I'd do pots separately so can make sure they are cooked

Brown the chicken (either whole or cut into large chunks) in olive oil and then stir in a tbls of flour. Cook for a minute. Add a large glass white wine and a slurp more, and a pint of chicken stock (2 chicken OXO cubes). Chuck in all the veggies, salt and pepper, cook till veg is tender.

Serve with jacket potatoes and peas.

I started it before I saw these.

Browned mushrooms and onion, added chicken, sage leaf, fresh thyme and wine. Put in casserole dish with turnip, parsnip and carrot and some veg stock (no chicken stock). I didn't add any flour. Is it too late? I do beef stew with a redder sauce (red not white wine) usually. Am still going to put dumplings on top. Any excuse for some suet. Good idea re potatoes - kept them out and will bake later. Thanks!

no not too late. sounds lovely. add flour about 30 mins before the end and it will thicken the source - if its thick enough anyway don't bother. mix flour with few tablespoons of cold water than add so it doesn't go lumpy
