10 -15 minute meal ideas?

There was a similar thread a while ago but thought it might be nice to hear new ideas. Ideally ones that use minimal pans/ dishes!

Here are mine

  • Spinach, Seafood and Tomato Spaghetti

Can take 5 mins if you use fresh pasta.

Stick the pasta on

Heat pasatta with halved cherry toms, when almost done add a pack of 'ready to eat' seafood. Stir in a few handfuls of spinach leaves.

Add black pepper and lemon zest, perhaps fresh parsley

Stir together and serve with crusty bread

  • Chicken and veg couscous with harrissa

Finely slice chicken breasts and stirfry with peppers, red onion, spring onion and aubergine. When cooked stir through a tablespoon of harrissa

Heat up chicken or veg stock and add to cous cous as per instructions

Stir it all together, top with fresh coriander and serve with pittas and greek yoghurt.

Pasta with homemade pesto. Boil kettle. Put pasta on. Make pesto whilst pasta boils. Slurp noisily and hungrily.

Thai curry - v quick if you don't mind using a paste and stir fry vege:
put rice on to cook (I have a microwave rice steamer which is v easy and quick)
Meanwhile whack a couple of packs of stir fry vege into a huge pan and fry for a minute or two.
Add some cashew nuts and fry for another minute or so.
Add some thai curry paste. fry.
Add a tin of coconut milk and some water if needed.
Cook until vege is done.
Serve with the rice and loads of fresh coriander, plus chopped red chilli if wished.

marmite on toast takes about 2 mins and is DS favourite meal. plate optional.

veggie tortillas - brown two tortillas per person on one side; flip one over.

smear upturned side with some salsa (discovery's is nice), grated cheddar, sweetcorn and spring or red onions.

can add lightly fried courgettes, mushrooms peppers etc.

add other tortilla on top (browned side facing inwards). flip over in pan so remaining tortilla side gets brown. enjoy!

yummy with a bit of soured cream and guacamole!

Stir fry

We get 2 chicken breasts, egg noodles, tescos mixed stir fry veg and either chinese stir fry sauce or tai sweet chilli sauce.

Cut breasts into small pieces,brown in a wok,add veg for 2-3 mins, add noodles for 1-2 mins, stir in the sauce, cook for further min and serve.

Very quick and easy and gotta be someway to your 5 a day.
