Does anyone have a 'healthy' cake recipe?

It is DH's birthday on Tuesday and he is 2 weeks into a major - but long term - weight loss/fitness plan. He has already lost 8lb but has another 4 stone to go.

I always bake a cake for his birthday, but don't want to make things difficult for him and wondered whether anyone had a low fat/healthy cake recipe that I could use? This is a huge effort/commitment from DH and I really want to support him, but still want him to have a birthday cake! (soppy wife emoticon)

No - was going to offer my all-bran cake for ...erm lower half health - don't think this is quite what you're looking for!

www.homemade-baby-food-recipes.com/healthy-first-birthday-cake-recipes.html 3rd recipe down. I replace the flour with wholemeal self raising, add an extra tsp of baking pwder, and use to make muffins instead of a loaf.

ultimate makeover recipes are low fat.

this is really nice but not very birthdayish

225g SR flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
5tbsp veg oil
grated zest 1 orange plus 4 tbsp juice
140g light muscavado
140g grated carrot
1 eating apple, grated
85g raisins
50g pumpkin seeds

mix oil, OJ and sugar in a bowl. add to dry ingredients. add everything else. 20cm tin 50-60 min at 180/160 fan/gas 4.
