What to do with leftover cheese?

Any ideas? I have loads of lumps of cheese stinking out my fridge (in a yummy stinky cheesy kind of way) and wondered if anyone had any recipes to help use them up before they go WAY past their sell by date?

LOL, don't tempt me! This is part of my new years resolution not to waste so much food. I've been brainwashed by the 'we throw away a third of our food' thing on telly the other night.

i make these cheese fritters or a cheesey pasta gratin type thing

Freeze it

broccoli and blue cheese soup (or celery and blue cheese soup)
Quattro fromaggio pizza
I had some filo pastry left over so plonked a bit of feta and tomato relish in the pastry and made wee money bags as a starter.
Quiche with any sort of cheese works.
Cauli cheese and bacon.

savoury bread pudding.

pot of cream
finely chop an onion and the cheeses ( stick it all in the processor, its easier)

get some French bread and cut into chunky slices, if its ever so slightly stale all the better.

pour the cream into the cheese and onion. i add a clove of garlic too but thats optional.

stuck it in the over till it goes all gooey with a nice cripsy top.

Cheese and black pepper buttons - quite possibly the best cheese biscuits I've ever made/tasted.

Open up some tinned tomatoes into a pot, melt in the cheese, add lots of pepper, some red wine, and eat the mix with spaghetti and the rest of the red wine!

Yum.
