Have leftover stale gingerbread - any ideas for a clever pudding?!

Got quite a lot - it was one of those gingerbread houses, but the kids wouldn't eat it, in fact even I didn't really like it, which is saying something

So I now have about three gingerbread walls and half a roof... could just chuck it in the bin, but it would make me feel like mother of the year if I could cleverly create a fantastic pudding from it. I was thinking of soaking the gingerbread in something and maybe adding fruit/custart - a bit trifley? But I'm not quite sure what/how - any ideas?

you could crumble it up and put it out for the birds and then feel all virtuous because

A birds will benefit

B less lbs for your hips

haha that's not a bad idea at all!! Not sure the birds will necessarily eat it - it's really not very nice

Pound to crumbs, mix with butter and use as a base for lemon cheesecake

My husband makes this with ginger biscuits so I guess you could substitute the biscuits for chunks of gingerbread. He claims he got the recipe from blue peter (so I don't know ho the cointreau(sp?) sneaked in!)

soak biscuits in orange juice and cointreau
stack biscuits along a plate as if they were still in the packet (like this ()()()()()()()()()() )
whip up some cream
cover biscuits in cream
grate over some chocolate (preferably orange chocolate but any will do)
put in fridge to set
slice and eat!

It's yummy but not great for new years dieting!

Make some toffee sauce (butter, golden syrup and sugar boiled together, with cream added).

Cut up gingerbread and put into an oven dish.

Pour toffee sauce over the top and bake until hot and just starting to brown.

Serve with vanilla ice cream and/or more cream.

Xmas Trifle:

Spread liberally with mincemeat. Place in layers in a bowl. Soak liberally in sherry. Pile

Or
Chocolate Trifle:
Spread with chocolate spread. Layers in bowl. Soak with sherry/booze&black coffee for adults or apple juice for kids. Pile chocolate custard on top. Pile whipped cream on top. Scatter with toasted flaked almonds. Allow to mature for 24h before eating.

The toughest bit is the waiting!
