Healthy meal suggestions please.

As per usual, I am trying to lose some weight, but I'm struggling to think of more than a few healthy meal options, that don't cost a fortune, aren't too time consuming to make, and that I can feed to the whole family.

If anyone out there can offer me any inspiration, I would be so grateful.

Hi there, I started a thread on this yesterday! I guess we are all in the same boat.

The bit I'm finding the hardest is trying to do it on a budget and also have some taste and flavour- I don't know about you but I neither have the budget nor the inclination to have a steamed chicken breast and steamed vegetables for dinner every night of the week!

Our meal plan for this week is

Sunday- rainbow trout stuffed with lemon and herbs, roasted new potatoes and veg

Monday- smoked haddock risotto with courgettes and tomatoes

tuesday- chickpea and vegetable tagine with lemon and sultana couscous

Wednesday spinach and ricotta low fat philly canneloni

Thursday- Chicken tikka masala and rice (madhur jeffrey recipe)

Friday- bean fajitas

Saturday- homemade pizzas (bought bases)

Oh dear pressed post too soon. Curry on thursday and pizza on saturday aren't the healthiest options but I have to be fair to DH as well- he is as thin as a rake so I can't expect him to live on rabbit food!

Plus Im adapting the recipes- greek yoghurt instead of coconut milk in the curry and veggie toppings on my pizza, DH can have his laden with chorizo and parmesan if he wants!

Sounds yummy - thank-you! It sounds like we have the same dh too - mine can eat whatever he wants, and I've seen more fat on a butcher's pencil.
